I think that some fighters are well known for their fighting skills, certainly the likes of Grimm Oathbreaker or the deceased Toinus, but most people while being a fighter as a profession or having the class itself seem to be famous not for their fighting skills but for their association with a specific guild, leadership skills or their personalities.
The likes of Arkaine Half-Orcen, Revenark Stonehold, Eleanor, Durin Ironfaar, Sveta Asperan, Mendel, Xavier Aylomen, Korgoth Ironfaar, Mealir Ostirel or Jonas Rokranon come to mind.

I felt I needed to log in on my old forum account to add credence to my knowledge and historical understanding of the server for this, lol.
Here would be my grouping, based on more famous, than noteworthy (in other words, there were several whom might have been mechanically superior but were not as widely known ICly):
1.) Mendel (Biggest nightmare on this server is Mendel confused

)
2.) Tyressen Arfaniel (The guy just carries a big stick, period....though I want another crack at him

)
3.) Mealir Ostriel (Perhaps the most "well known", cause he won't let you forget it, damn bards

)
4.) Uriel Honorblade (Smite King, damn Paladins!)
5.) Grimm Oathbreaker (Seemed extremely tough, though I didn't spend a lot of time with him)
6.) Thedran Rock (What a (person), but he knew how to win)
7.) Forget the name now (I know it's ironic...) but the character that was an Aasimar Paladin/Ranger of Meilikki........used to use a Greatsword and Tower Shield....
8.) Any of the Dwarven Slayers, save for Mentalist's

.
That's all that really stand out, that I remember showing up and the tables of any event were turned on there head......fighter specific at least.

Your dwarves were renowned for nothing, and fought in no major battles or any of that were even noteworthy. You were all corrupt and built a stronghold in the Troll Claws because you had staff powers, and then changed the spawns in that area to drop the best loot on the server, and then started trying to stop any non dwarf or non affiliate of your faction from hunting in that area. The only note worthy dwarf who was actually honorable was Toinus Ironfaar, who came before all of you and was never associated with any of you, he was also a friend of my paladin and knight character because he was actually decent and good. You also just power build, grind, and then stand around campfires talking about nothing, and starting fights and pvp gank sessions.
Arkaine Halforken struck the death blow on the avatar of Bhaal, fought in every major war and was the commander of the Balduran forces in the last battle, fought numerous opponents singlehandedly and slew them all. He killed every member of the original Temple of Bane, and ran down the last fleeing straggler across an area and finished him off. Thedran was not a renowned fighter but a Bard who used spells and scrolls and concealment and disabling magics, nonetheless when he and his villains and thugs including Zhentarim members like Rai Kuu Kyntalia accosted Arkaine in 2009, he challenged Arkaine to a duel without weapons in the Cloakwood, and Arkaine thrashed him within an inch of his life and then left him with his head rammed inside the trunk of a tree, they then all tried to get out of the indignity of what they deservedly got and tried to downplay what happened etc, there was a massive crowd who were all mostly scum and villainy and one of the things they do is spread lies and propaganda about themselves and others. Arkaine lead the Balduran forces that sacked Roaringshore and killed many pirates in the battle singlehandedly, was constantly the field commander over all others in more than a dozen major battles, fought the Demon Prince Baphomet in single combat when all others fled in fear from him including several of the fighters mentioned in this thread like Aiden Vega who was a merchant in gawdy armour and not a battle hardened warrior, and definitely not a noble knight of higher caliber like Arkaine. He fought three duels after being challenged south of Baldur's Gate one after the other without resting killing each combatant, and then healing up and slaying Valiant Blinncraft in a final duel, he killed Lady Katherine Vernosa in single combat who was a noble born warrior with skill similar to that of a knight, and not some scummy sword coast mercenary with yellowed teeth and rusty weapons and armour.

Then WotC cancels everything and announces that 4th edition is the new thing, except with further simplications like sticking to only humans and half-orcs as well as wizards and fighters. Double the prices. It's now a game geared towards those with rich parents in the teens.

Arkaine also killed Lotrik the mercenary and brigand and worshipper of Garagos in single combat in the Cloakwood, something you tried to do everything to get out of suffering the indignity of. After Lotrik outright murdered several clerics of Tempus in Baldur's Gate. Your character was below level 30, something like level 22, and mine was level 30, and I warned you that you stood no chance and to surrender and you didn't. I didn't even use buffs, not that there is anything dishonourable about a paladin using his class abilities, but sometime later you started bragging about how I only won because I buffed up, outright lying about the entire situation. You also suffered no consequences for committing outright murder within a temple within Baldur's Gate, which was another corrupt occurrence where you weren't made to suffer the consequences of your actions.

Siomir was the fighter I had the most trouble fighting against. But he was always followed by a buffy sorcerer, that damned one!
Most epic fight tho was against
Jonas Rokranon, near the cliff of Candlekeep. What great memories. I guess he's the most 'notable' melee character that I know on the server. Maybe not for his raw skills and strategies, tho. (CHARGE!!!
