I'm pretty sure that works the same way it works for Frost Mage.

50% weakness to fire + 100% immunity to fire = 50% immunity to fire

Energy Immunity actually grants Resistance 999/- in the chosen element, I believe, rather than a % immunity, meaning negative percentages do not stack or negate it by any means.
