14 DEX and Mithral chain mail is fine. Intuitive attack only works if you have monk levels twice your other levels (20 monk levels at 30)

About the armor, unless you got a mithral armor waiting to be used, you are probably going to be stuck with chain shirt for a while. (The usual 4 armor +4 from dexterity modifier.) Thus, your Cat's Grace is enough to give you maximum AC.
Anyhow, you should also remember that Rangers do get shield proficiency. Thus, nothing actually prevents you from grabbing a long sword and a heavy shield to make the first few levels easier to get. Then you can make use of slings and heavy shields if you just happen to find something neat or get something second hand for a bargain.
Also, your animal companion will be lagging a bit behind when you first get it. Thus you will want to get the Natural Bond feat at level 6. (When you do, your companion is no longer super squishy and can actually start to tank for you with just few buffs.)
And this is a bit later, but another topic reminded me of Brutal Throw. It is possible to make a strength based ranger, pick the archery style and take the Brutal Throw feat to get your Strength added to your throwing weapon AB instead of dexterity. It too can be fun, but the nature of throwing weapons is as follows: Once you run out of stack, you will try to beat the enemy with your fist. So in order to keep throwing, you need to have different stack on quickbar and keep switching before those run out. (You can get power attack feats and go melee as two-hander or with sword-and-board.)
But wisdom based ranger will do fine.
Oh, and favored enemies:
Giants <= Trolls, Ogres, Giants.
Undead <= Ghosts, Zombies, Mummies, Skeletons, Vampires.
In my opinion, PvE wise those two are a must.
And in PvP,
Elves, Halflings, and Humans tend to cover most of the sneakers.
But the thing is, as a wisdom based ranger, you do not have to worry that much about your favorite enemy picks. You will have an animal companion to help kill things faster.
