((This is my personal opinion and not a ruling. Good portion of this information is something your character may not know.

PnP undead are permanent. They do not have a timeout, there's no limit on number of them, and they do not disappear on their own.
Animate Dead creates undead you can control, but if you create too many, first created undead will become uncontrolled.
(PNP) Spells in line of Create Undead create undead that are not under your control, and that's why they have evil descriptor.

When out of control, they'll be left to their own devices, and depending on their type, they may propagate and swarm.
Additionally, merely making one of them establishes a link to negative energy plane (this is something your char might not know), which is antithesis of all life. And of course, all those spells require a corpse.

There's no "greater undead summoning". The school is necromancy and not conjuration, so you can't summon anything, as this is what conjuration does.
Instead you take a dead body or a piece of it, breath undeath into it, and create a servant for yourself. Every time you use it.

Obviously this is much more macabre than snapping fingers and having vampires appear.

Needless to say, all those things are incredibly dangerous, as you're dealing with energies and entities that in their endless hunger will seek to destroy or devour all life.

Speaking of which, if you have an oath against undead summoning and you break it, that's a major win for team evil, as oaths are not taken lightly and are not a currency to be traded. Doing good deed by breaking an oath does not cancel out breaking of oath.

So. With all this in mind.

If you play your hand very carefully, you can call undead, when absolutely necessary, and remain neutral. You'd be walking a thin line between neutrality and darkness and may end up on "evil side of neutrality", as using armies of corpses may quickly become tempting. But it is possible to maintain "whatever works" attitude of a character that is neutral on good/evil axis. If you're good, then you likely won't remain good for long.

And that's how I see it.

Do keep in mind that the best idea is to make your character act in the way that makes sense to them, even if that means alignment shift.
