Problem with sleep is that I think the hit dice are capped by the spell itself and that doesn't scale, quickly making it useless - kinda like the spell Poison.
I mainly meant it to be useful for the first couple of levels, there is also deep slumber and his of sleep for higher levels but yea I think it's not very effective later.

Yea it's actually insanely easy.
You start the game with 1,000gp. You immediately arrive by caravan in BG. Once there, you head to the Thayan's Guild Shop. You use around 750 of your gold to buy a scroll of Lesser Planar Binding.
Then head across the street to buy a Backpack of the Hearty from Maltz's shop which is around 200 gold. This backpack will give you an additional 5 HP, bringing your total to 9hp, with beetle familiar you'll have 10hp. You can also cast mage armor on yourself to boost your AC.
Next, you head to the Graveyard, you cast the scroll and summon literally anything. It will have around 10HD and will slaughter everything quickly and easily. You can use the control henchman feat so that you can stay way in the back.
Optionally before going to Thayan Shop, you can do the rat and scarecrow quest real quick which will give you almost half the way to level 2.
All you need to do is find one 1250gp item from loot in the GY before your summon ends to buy another one and repeat. It's easy to sustain.
However, once level 2 you can use Ghostly Visage to more or less be immune to gy creatures and if you're a proper gish build (like you probably should be) you can start smacking things with any blunt 2h weapon.
