Don't remove petrification please,but make it so petrified characters can always be interacted with to cast stone to flesh on them, and add the option to respawn while petrified, like in NwN1.
Just don't remove petrification. It is another form of death, so prepare for it and don't be a cowboy yee haw!

There are no level 30's, only level 20's with benefits...

The long petrification is annoying, yes. I agree on that. As others have said, however, creatures that can petrify are dangerous, and best to be avoided, if not fully prepared.
My main issue with petrification, however, isn't with the mechanics itself, but rather how it is often dealt with in game. Most just go hostile, initiate PvP, and bash the character until they are dead, after which the petrification usually goes away. If not, then rinse and repeat.
Lore-wise, if someone is turned to stone, it isn't just a shell around the character. It is a complete transformation to stone, all vital organs included. The character can exist as a statue for a thousand years, and then be released, not having aged a single day. However, any damage done to the statue, which isn't repeaired prior to the petrification being removed, will be permanent. I'm talking loss of limbs, great gouges in the sides, a missing head, and whatever else can happen. Not even a Heal spell can reverse that. Only option is Resurrection, which will create a new body for the character, if the previous one was destroyed (hence the 10,000 gold value diamond required).
Therefore, if someone actually smashes a petrified character, it is essentially perma-death (lore-wise anyway), unless someone actually casts a Resurrection spell on the smashed character's stony remains. Most players only have the Raise Dead scrolls.
It is far more interesting, RP wise, if someone actually goes through the troubles of finding a Stone to Flesh scroll, or someone who can cast that spell, and brings that remedy back to the petrified character.
