If you are making a WIS-based monk (not a sneaker), I'd go for as good AC items as possible (likely +3 on amulet, ring/helm/cloak and boots), robes +3 and decent fists (I bought +4 enchanted gloves for not too much gold).
None of these items cost too much if you stay in the +3 range. AC amulet perhaps around 15-20k, rings around 10k, boots around 20-25k gold, and robes around 5k on the auctions?

You also want items to raise your dex and wis (for AC) and con (HP) and str (for extra damage and AB). I would aim for +2/3 on these stats depending on what is affordable and what fits in your item slots.

If you want a fist monk its hard to go wrong with a pure 30 monk. Pump wisdom as high as you can and take intuitive attack which uses wisdom for AB instead of strength. Notable feats to help you are weapon focus unarmed/fiery fists/improved critical unarmed. Once you get to epic levels you'll want epic prowess/expose weakness/blazing aura and then as much great wisdom as you can get. Aim to end on an odd number and find a +3 wisdom item. It is quite easy to get to 47 or so AC without UMD and with easily attainable gear without even min/maxing everything and the damage is decent with 3d10 +d6 +d10 + 3eb + d4 weapon damage per attack.

monk's belt for weapon specialization(fists)
knights ring for toughness - got two of these for 20 bags each.
I reckon rings +3 ac cost now twice as more (18-20 bags)
you'll be Very happy to have a druid by your side:) but thats not that you can buy for gold..
wis monks are not that good on reflex
and cloak slot usually occupied by regen cloak, because only very, say, lucky persons can get regen in other slots. And them would non the less be wanting regen cloak.
Of course if your fist monk 's not one of sacred fist ones - they can get regen (anf most other hubgs) from self buff.

Good luck with the monk's belt. Haven't been able to get one in 3+ years. I suppose it technically is out there though. Also there is no reason to get 2 rings of the knight. They don't stack. There is a good AC ring for sale from a vendor in the palace district that will afford you +4 deflection AC against all evil things and +3 otherwise. Basically a vendor bought epic ring. Definitely pick that up. Also gloves there that give +3 eb and d4 piercing damage. You won't find better for any reasonable price. I usually try to aim for realistic items. There are lots of uber things grandfathered floating around but they don't change hands except in trade for other uber grandfathered items. :P
