What tactics do you use to avoid being dispelled?

Begging, crying and bribery.
Other than that, try to ensure you have a CL of 30 so only Mords works.

There's a few things you can do, but they require timing. Generally hips or a portion/wand of invisibility works to break line of sight, but casting or using a scroll is too slow (without quicken) to stop the casting, but if the caster has high detection or see invisible you need to attack quickly before they recast, unless your timing is perfect and they lose the Spell.
*shameless plug* Tarent Nefzens wands and elixirs!

Have a higher level toon with you, so the AI meta's your situation and attacks the more powerful foe first.

Dispel their dispel and cause a vortex that crashes the server.

Prevention is worth a ton of cure. Play an elf non caster with 8 CHA and no UMD. /s

Counter spell, cl 30, or buff a throw away minion and send it in first. The light spell works well enough for the third tactic

Most of my builds don't need buffs.

I have this issue too leveling my cleric. Every 4th monster casts dispels. It's a bit frustrating since I'm so reliant on spells to boost my AB.
How do folks level sorcerers and wizards?

Pretty much, if Area mobs are balanced to CR of the Area, then a CL that matches that Area should be what you need to build for.

That makes sense, thanks Steve.

The way dispel works, as it may help folks understand what they 'need' to have the best chance at preventing dispel...
Lesser Dispel: 1d20+1/CL (max +5) vs. DC 11+spell effect CL
So if you are level 4 and the mob is level 4:
1d20+4 vs. DC 11+4=15. The mob has to roll 11 or higher (50% chance to remove each ward).
Dispel Magic (BGtSCC custom): 1d20+1/CL (max +15 [vanilla NWN2 was max +10])
Greater Dispel Magic (BGtSCC custom) 1d20+1/CL (max +20)
This is why CL30 is required to be immune to dispel (aside from Breach and Mords)... Because at CL30, your DC for dispel is 11+30=41 and the best a Greater Dispel can get is 40... So at CL29 Greater Dispel has 5% to dispel each ward (and each is rolled separately), so if you have 10 wards up with the RNG in NWN2 you will probably see 1 of your wards drop. This is also why CL28/29 is considered acceptable for some types of builds, if it is to gain other things. For example, some will go Monk6/Cleric8/SF10/Hierophant6 (CL29) to gain 1 BAB and Improved Knockdown vs. M5/C9/SF10/H6 which hits CL30...
And always remember, Breach has no CL requirement.
