Question on elemental immunities affecting certain builds

I recently made a post about building dragon warriors, and now that I RCR'd to dragon warrior I've hit an immediate snag. I chose fire as my element and noticed that MANY enemies that aren't fire creatures have significant fire immunity built into them. The wizard cultists and even ICE mephits in the abandoned cathedral have 75%, Batiri commander and other mini bosses seem to have 25%+. Does this theme continue throughout the mod? I figured fire would work against most things and also work extra well against a few ice creatures like frost giants and mephits, but that doesn't seem to be the case.
Is fire immunity % just too common to play a fire dragon warrior? Is acid immunity much less common, should I just RCR again to acid before I waste any more time? (Part of my character's personality is hating undead, so I think fire or acid make the most sense for him)
