Seems like even if you save against poison vs. these zombies you still get a decrease in strength, dexterity and constitution. What gives?

That's just .. how it works, it's worse if you fail the save.

These creatures are just pure cancer...
Also, if you drink a potion of Lesser Restoration, your ability scores do not fully recover, and you have to wait for the effect to dispel itself.
I have not tested it fully, but drinking a potion of Cure Disease seemed to end the Tyrantfog fog effect on the spot. (Or then it was potion of antidote.) Have to test again to know for sure which one was it.
Healing kits have no effect agaist the effect.
And yeah, I hate this fog far more than the sudden abundance of Elemental Shield mob spellcasters.

Well, monks are supposed to be immune to disease and poison, but my monk still gets affected by these tyranfog zombies. Not sure this is right.

Also in Monsters of Faerun, page 85, its DC 13 for one point of constitution damage... and only once per encounter.
Thus... These things shouldn't even be called Tyrantfog Zombies, perhaps Putrid Tyrantfog Zombies? Or epic Tyrantfog Zombies?

I tested this and can confirm it.

Spawned to pose a challenge?
I mean... PC's ain't suppose to be as powerful as we are, so... I assume monsters get bumped equally so ^^.

I accept that we have monsters that pose a challenge. These Tyrantfog Zombies are just a bit ridiculous. Imo.

Technically speaking no, if I recall correctly, those were of Cyric's creation or something.

It does not bypass Deathward's immunity to ability decrease.

Alright, good to know.

1) Potion of Cure Disease will strip away the fog effect. As far as I know, these cannot be purchased from anywhere.
2) Potion of Lesser Restoration does not fully remove the ability score damage.
3) The fog doesn't show you the save roll you apparently make. Whether you fail or succeed at it is only visible based on the ability damage you take.
4) The fog ignores disease immunity.
5) The fog AoE is much bigger than what the in game effect would suggest and in regular sized corridors it is next to impossible to run past it without being affected by it.
6) Considering that cure disease is the only way to get rid of it currently, the duration of the fog effect seems to be far too long. You will run into a new Tyrantfog Zombie before the old effect has even gotten a chance to run out.
7) The only working immunity against this ability is immunity to ability score damage, hence anyone able to cast Deathward is not going to be bothered by it.
8) Healing kits and heal skill cannot be used to treat this particular disease.
Thus the biggest complaint is that it is a disease, which ignores almost all disease related abilities and items.

Humm.. would it be time to introduce some cure disease potions then? I thought those were standard dungeon delving fare.
