I'm rolling up a paladin but I've never played one in NWN2 before. What should I be aiming for? Just want to smite stuff with a big sword, really.

Many Paladin spells are + Even Number, to Abilities. So to make full use of those Buffs, you want your own Builds Abilities, especially STR and CHA, to end on an Even Number.
Is Greatsword your choice? Consider taking Monkey Grip. Paladin can buff a Shield to +5, and combine that with Divine Shield, and you have sky high AC for Epics. You'll need that AC.
WIS 14 is fine to do, but if you go WIS 11 and find a +3 WIS item, then you can cast Lvl 4 spells...and use those 3 Ability points elsewhere, like on DEX, so you can also use a +3 DEX item for reaching 16 DEX and +3 to AC using a Mithral Full Plate. Or, plug those extra 3 Ability points in STR and save an Epic Feat for something good!
I personally am not a fan of Paladin + Divine Champion, because DC doesn't progress CL. DC is really good if you go to 10 Levels, and that is best then in combo with a Fighter or a Monk (and others).

Cavalier looks great. I understand I activate the kit via conversation. So after level 19, I go back to leveling as a regular paladin? I worry that not being able to see it in the builder, I'm gonna mess it up.
