i assume gathering meat will be tied to survival skill.

so the real reason is i dont think meat should be a mechanic enjoyed by all classes. It should be more a mechanic used by forester types, those who avoid cities.
it could be explained by a few things: knowing where to strike and not destroying the meat, being aware of the signs of diseased or poisoned animals, detecting the signs of cursed meat or animals that may have been magically twisted, etc, etc.
It also would be better if only 1/3 animals gave meat. after all, you just hacked it to death in a fight, not a butchery, and you also sank 28 magic missiles and 10 poison arrows into it...
i would say tie the ability to gather meat a roll of survival and craft alchemy.
That way every mage on the sword coast wont be cleaning and dressing every rat he kills.
oh... and if orcs could gather human and elven meat....
when cooking the meat, be cool if a craft alchemy determined whether the meat was a "cure minor wounds" meal that tastes like rotten cabbage, or a "regeneration" one, that rivals a five star filet mignon. It also should be noted some dont like that food is being given spell properties, as it is twisting magic, so craft alchemy could also explain why meat is turning into a wound healing miracle cure.
