What caster level is required to max out the animal companion's level?

It's not based on caster but on class levels, the more levels in classes progressing animal companion the better.

What's the required class level then? I'm going for a summoner build with cleric of chauntea 15 (animal, earth) / hierophant 10 / thaumaturge 5. Should be able to have 6 creatures out but I have concerns about what that thaum dip will do to the companion. I come up at class level 29 for purposes of determining animal companion level with the +4 level bond feat. But in an example scenario where it caps out at class level 26 I could dip into paladin for bonus saves which could make a difference in PvP

The Companion is improved up to level 30. Epic Animal Companion can then improve it beyond the level 30 cap.

In the end the companion improves at levels 24,27 and 30. Those Thaumaturge levels will result in a loss of 2 improvements - you will lose the 27 and 30 upgrade. Natural bond will take care of the one and epic animal companion will result to a full progressed animal companion, which is more than enough.
