This has been reported before, but reporting against because it's been awhile since I last saw it brought up.
It is currently not possible to target summoned monsters with offensive spells. AOEs can still affect them, as can positive spells, but if you attempt to target them with a direct offensive spell, they do not show up as a valid target. This particularly affects using negative energy ray and similar spells to heal undead, or using summons as a target for vampiric spells like healing sting.
As I understand, it's related to the way neutral/dominated mobs work, as BG's summon system uses dominate mechanics to work the way it does.

If I recall correctly, its a switch in the spells.2da that marks whether the spell is hostile or not.

Given the summon domination system I don't think this issue can be fixed. Don't hold your breath for a complete rework of it
