So I saw that Phantom backstab does not stack with rogue backstab. Does this include the Assassin backstab?

All prestige classes stack including assassin.

This one is a bit tricky. I will check it today.
Since, on Bgtscc assassin gives regular rogue sneak attack + only 1d6 of death attack, it can be the issue with it not stacking with phantom (since it's mentioned phantom SA doesn't stack with rogue SA).

Good news, it does. Instead of actually granting rogue type of sneak attack, assassin does grant phantom type one (but if you have rogue, it gives rogue type). Basically, it just increments existing base sneak attack feat instead of adding it's own. So, they stack.
