Strength for Carrying Capacity
I was mulling over some builds for Dexterity based characters (Rogues, warlocks, etc) and it got me thinking, how much Strength do I need really? From a mechanical perspective this attribute is not important, but what about looting? How much do you guys put into it? Can you make do with 10 on a medium sized race? Obviously halflings and gnomes will have it even harder.

You can make do with 10, you'll just become encombered very frequently if you loot and you have to trim your inventory all the time. Keep a +2 or +3 STR item in your inventory and you're mostly fine.

16 str iirc allows you to carry 3 full plates and a bunch of other gear...
i tend not to go under modified 16 score
so end at 12 for classes that can cast bulls or go 13 for other to wear a +3 str item

I manage well with 8, and I carry a +3 STR sickle just in case. If I loot anything, I generally skip on taking up armors or heavy weapons unless they're worth more than 20.000. I mostly find rings, amulets, poisons, potions, scrolls and such anyway.

I usually go for 12 or 14 base strength. But you can manage with 10 or even 8 - at least if you don't wear full plate. Also if you have high Heal skill, it can feel abit sad only being able to carry 10 or 20 kits (This is mostly a problem for Clerics and some Warlocks though.)
I put my constitution Warlock's strength at 15 from the beginning, since I would be wearing some mith plate and a buckler and I didn't want to compromise to much on extra items for swapping out or carry too few heal kits + other consumeables.
I use a +3 Ring to reach 18 and I almost put my 28th level skill point into strength, but I decided against it.
It also depends on how rich you already are, if your new and you have to leave alot of loot behind, it can hurt alot. Also, if your very rich you can just buy a bunch of Heal potions and not worry about being able to only carry 10 healkits.
You should also consider how many downed allies you would be able to carry in emergency situations. You can't always count on the high strength fighters to be alive

You can manage well with 12, but to get to 14, it is still usually only costs 1 point each. So if you can spare those two point to get 2 more strength points, do so. I think it is even worth shorting CON to get that STR, because carrying capacity is so important to making money, and not having a constant inventory headache.

I don't go under 13 in the last few years. Usually I'll sit on 14 if I can spare it, even for Wizards, but my older caster PCs have 10 and I am always burdened on them.

Za'than has had 8 STR since he was made in 2009... This is boosted by +2 item (So effectively 10) and then i got a +3 neck when the need arrives.
That being said, its... hard.
I got around 1-2 kg on him before he gets slowed down. If i change the armor model on my Red Dragon breastplate, the modifier to its weight is lost (unthill next reset), and is overburdened again. This makes going on loot-runs hard, because you cant carry anything.
So, as has been said.. id suggest atleast 13ish... since turning into a Horned Devil (32 str) aint really that appreciated

i also played a Draco Higfold... a 8 STR halfling warlock... not that was a chore...

I work on 12-14. It's difficult on 10 and I really, really wouldn't want to be any lower than that.

My rogue Hinzel has base 14 strength with a +2 ring. This definitely helps alot. I think the second max carry value for him is 300. His inventory is full nearly all of the time, but it's full of stuff that don't weigh too much.
