Getting to Beregost (at beginning levels)
Is there a way to travel to Beregost without dying at level 1-2?

Yes. Numerous ways. Making use of consumables or grouping up are but two ways.

Grouping is likely your best option... Find an escort !
Otherwise best to wait until you are level 4-5, or have the invisibility spell (assuming you are still playing your wizard).

Malts sells potions of expeditious retreat for a reason! Add to that a potion of shield and a potion of endure elements from sorcerous sundries and you should be able to run past pesky goblin shamans on the trade way just north of Beregost

This is good advice. I have two chars I'm working on. A ranger and a wizard. The wiz shouldn't be too hard since I have invisibility now.
However, sneaking isn't working. I don't know how high the move silent and hide scores need to be to work during night or day, or how much of an advantage night has for sneaking. It is about 6 or 7 for both and I've been unable to sneak passed the bears and bandits south of BG.

Remember that detection allows a d20 roll. Hide/MS is supposed to roll d20 + mod vs d20 + detection mod so at low levels you can be spotted by someone with 0 in detection skills simply because you rolled low (eg 2+7) and they rolled high (10+0). I have heard somewhere that stealth does not even roll a d20 and only uses the base mod but I cannot confirm this at all.
Once you start stacking some hide/MS gear and/or invest in some extra feat boosts (Skill Focus Hide/MS, Stealthy Feat) then you will start turning the tables. Most mobs past level 8 or so have around 10-15 base detection skills so you're not gunna guarantee your stealth until your base hide/ms is 35+

Plus detection is rolled as a check each round (each second if the spotter has keen senses) so a successful sneak has to CONSISTENTLY beat the spotter every round (or every second for keen sensers) in order to remain hidden.
Stealthing is not easy without significant investment...

Always been a fan of the F.E.A.R. technique. It's simple, costs nothing, and effective.
It works like this you run. Fast. And pay no mind to anything else. Ideally you'll have a sacrificial lamb (can we please get them added to the summon creature 1 table, neutral evil druids need something to trigger traps) to improve your odds.
That said potion of invisibility combined with this strategy is probably the best route.
