I would greatly advise Rogue dip. Evasion, Expose Weakness, Tumble, UMD and detection skill access, couple of extra reflex saves and 2d6 sneak attack bonus for 3 levels is invaluable. You could also go Monk for free IKD (6 levels) or Whirling Dervish.

@ Bob I just failed at adding things up, the build has 43 AC, not 44.

Best solution to twohanded meleers is to get shadowdancer or assassin for hips.

HiPS is not something for Knights to worry about, plus platearmor users. Its better to just rely on platearmor and tank, plus if someone looks away from you just go sneakattack greatsword them. Its fun

Certainly a lot to think about, but the fighter/AK build seems worth while.
This build is to simply get me fit for finding what I'd really like to do.

Playing a two hander works fine in lower levels. Once you get to epics, things get dicey.
I think mrm3ntalist has a good concept. You need the +3 ac from dervish. Put that with improved combat expertise and a potion/amulet of shield and you should be okay in the epics.
I think you could also explore ideas with a build that uses 10 levels of dwarven defender, 12 levels of fighter, and then 8 levels of something else.
The dwarven defender route allows you to use the dwarven waraxe which is an amazingly versatile weapon. 1d10 with x3 crit for strong 2handed wielding, but you also can use it with a shield for that extra AC when you are facing down a dragon or horde of giants.
Trust me. Going straight 2h without magic is hard hard hard. You'll want the shield option for tough fights.

I guess I just don't know what build would be easy for a beginner, but still viable.

Well, I can honestly tell you at level 10 Im not having 2handed trouble, and my wife isnt either. I can understand late game you'll have issues, but Im assume late game you'll have friends that'll travel with you more often than not.
If you want to go really independent, take some classes in Cleric/Favored Soul/Divine PrCs, Divine spells can really bring about your own survivability without any real drawbacks besides a lower BAB. Plus it might fit your Knightly Characetr RP concept

Personally I start with a concept for a character first. Like you did, saying you wanted to try a 2handed Knight. From there I decide on my race, and then from that point on I decide if I want them to be pious, and then I decide the classes I want.
Long-winded paragraph for no reason Forward Hooo! ((IE. My thinking process with a character and its train of thought)
Example:
Wanted to make my Half-Orc Knight of Gond, Faithful of Waukeen. Looked over the Classes, Oh hey, Anointed Knight fits my idea. What do I need for it? Okay, these skills and this feat. Alright, no problem. How am I going to get there as effectively as possible? Well, some Rogue and Fighter mixtures will get me all the skills and feats I need. Decent BAB, Saving throws averaged out. Alright. Stats, well my stats will determine the weapons I use. Dex or Str? Well, I'll go str seeing as Im an Orc, and get a bonus. Pump some into str, try to make both my main stats, In this case Str and Con, either both be at an Even number or Odd number, because at level 4 and 8 I'll be putting 2 points somewhere. If they are odd numbers, then both get 1 point, if even numbers, I put 2 points into my attack stat. I also make sure his intelligence is decent for the skill points and the ability to be Posh in RP. I gave him no dump stats because I dislike Dump stats. So I chose Str, now I look at weapons. Do I want defense or offense? Well... Looked over anointed knight.. Get some good offensive and defensive feats.. So Im gonna go straight offense to make use of the elemental and massive criticals weapons. So. Great. Now I go 2handed weapons because of this. With the 2handed weapons I decide, do I want to go High Crit build, or High damage build? Well. I figured I like critting alot, so, Greatsword it is. Despite the fact that Greataxes are amazing when they crit (Upwords to 100 damage per crit)) I like the fact I crit more often with Swords. Thus my character is born. Plus I go fullplate because unless my dex is like, 24, I never go with any other armor.

Often times, since true beginners do not have the Epic Gear that takes 2–3 years on BGTSCC to acquire, your best bet is to make a spellpowered PC, because not only are non-spellcasters more heavily dependent on Gear, they are also heavily dependent on consumables, likes scrolls, wands, potions. That means having lots and lots of coin. Traditional D&D was designed to adventure in a well-rounded group, each member of this 4–5 party would provide the necessary skills and powers to allow for general success. Actually, To be honest I just thought of a strange mixture you can go for with this. Try dipping into bard a few levels. It'll give you some basic spells, Bardic abilities that could boost you more than you'd be surprised for. Now stick with me on this, as I know it sounds anti-Knghtish
