I've always beaten melee or ranged sneaks on my casters. All of them, whether I could detect them or not. When I was crit immune it was a complete joke, but even when I was not, it wasn't such a big deal.
Being in stealth does not mean being invulnerable. I played SA rogues extensively on the server, so I know them pretty well: they have very little chances (to none) vs any well played caster Wizard or Cleric. Against Druids or Shamans it's autoloss. With Sorcerer, it depends on the type (spell selection, defenses).
Basically, it comes down to this: whatever the sneak can do with the first flurry out of stealth can be undone by a heal potion or two. The sneak, conversely, can be one-shot by a maximised spell, or near enough, not to mention AoE fort or will saves.
A simple quickened Cloud of Bewilderment ended my last encounter with a lvl 30 sneak. A Ray of Enfeeblement as the sneak gets out of stealth would have the same effect, if you have a decent RTA (he cant move anymore -> you nuke the area he is in -> he wheezes on the ground).
The list of AoE spells that are lethal to a sneak is very long. And you don't need to see it to hit it.

Unfortunately i have to disagree. My last fight against a sneak went like this: I knew he was there and going to attack so i spent the first few minutes buffing which the sneak oddly allowed me for some strange reason. I had pretty much every buff up including several which should have let me see the sneak but did not, (maybe they were broken?) I was fully ready for him and had every advantage (i thought). Then the sneak struck. He did well over 100 hp and his death attack paralyzed me despite having freedom of movement up. After that he just stabbed away at his leisure and i was dead only 10 seconds into the fight. I never had a chance despite knowing he was going to attack and having all my defenses up. Sneaks are simply op against casters. They may not do too well against other sneaks and warriors but casters are definitely on their lunch menu.

"Over 100 HP" isn't a big deal: it won't kill you, and it will give you a 6 seconds window of opportunity to kill him. Basically any save or else on fort or will is autowin.

This is getting off topic and I apologise for that, but what level are you Vrass? Most arcanes should have Premonition up and a simple Mindblank or Protection from Alignment will stop the stun effect. Mirror image should stop most hits. They're really all you might need. Then spam AoE fort/will spells. Try it for practice. Grab a rogue mate and practice. I guess it also depends what levels both characters were to a certain extent and player experience, but if your Mage is high level then you definitely should be eating the rogue for lunch, not the other way around. Every time.

The character was a cleric not a mage. His lv is 24. 100 hp per hit is a big deal when you only have 197. Im not complaining mind you... the battle went as it did, you win some you lose some. He will be better prepared next time.

Some people just love it and practice more. PVP is whole big another game apart of PVE and RP, completely other strategy and tricks. Not only should know them - need to use them often not to loose a skill.
I myself have but to no such in NWN2. But I know it was more equal in NWN1 because HIPS didn't have cooldown.
There are ways to attack and counteract, for example sneak could use scrolls / have decent saves on swappable gear (cause hide may mean less vs casters).
Cleric I believe has stonebody, which would give time to discern if sneak should be dispelled of scroll effects first, then storm of vengeance, lions roar, implosion, etc. Some sneak may even fall to new reflect pain spells. Someone tested them with damage reduction - do they reflect before it is reduced or after?
