Consumables and Crafting
Two questions:
[1] Do we have a list of everything that can be created, and their recipe, using the in-game crafting station (like at the FAI, or Maltz's shop). The crafting with beetle shells, etc?
[2] Do we have a list of all of the harvestable consumable available in game? Things that require survival, or the 'craft' skills? That sort of thing.
I know, I know, what a lazy piece of work.. but I figured I would ask before I did the dirty work myself.
Any ideas?

There is no list that I know of and I'm not sure there is an easy way to build such a list... You might contract (IC'ly) the Windspell Adventurers and offer them a bounty to collect and list off all the various flora and fauna they can find throughout the Sword Coast. Would bring a bit of RP to both parties and you might end up obtaining IC'ly the thing you are looking for OOC'ly.

Funny you should mention them.. 
I am actually considering the possibility of a sage-like character concept, one that would already know some of these things, and wish to OOC know what the character would know, and where to send folks after such and such.
It is one of those things that its easier to RP about if you know whats possible, rather than RPing about things like stoneroot and then having them no longer be in the module. If I knew the parameters it would help with RP.
Its cool though, if no one puts one forth they might have already done I can figure something out.

Well, I can try to get you started...
monster parts would be stag beetle, fire beetle, and spiders as well as wolf and bear hides and undead arms (not craftable, but they are in game).
plants would be ragweed, stony plant, aloe and healing moss
(those are the only ones I recall, not sure if there are others).

I always check the crate in the FAI when I visit it and find beetle shells. I use the bench on them and put the finished product back in the crate. Apparently a lot of people don't know about it.
Konosuba taught me cool wizards don't look at explosions.

Barkskin potions, antidotes, gold. Just cast any spell while the crafting ingrediant is in the bench. Wands or scrolls work too including cantrip wands sold at the merchant.

Troll hides can be sold at the book in front of Candlekeep. Trolls are found right by there at the sea cave in the lions way and the troll hills. They get you gold.
Minotaur horns from cloakwood get gold from thunderstorm in beregost.
Spider mandibles go the same place as beetle shells.
Bear hides and wolf pelts go to a guy in BG farmlands.
Where does ectoplasm go?

There is somebody in Soubar too {hint one of the quest givers}, who you can sell different items to. Wolf and bear hides for sure. Not sure on other items.

Hehe I actually knew about the trolls and wolf pelts it was really the crafting part that was new to me... Never found ectoplasma to be honest.

While I don't have the time to play I'm still lurking the forums.
Planehopper, I've sent you a bunch of assorted crafting notes. Some of them are now horribly out of date as there have been a lot of changes but still better than nothing. Hope it helps.

Ectoplasmas drop from ghosts in the Fields of the Dead. You cannot do anything with it yet. Afaik.

Yeah, Ectoplasm should really either be removed or have some use implemented (or at least be able to turn them in for gold). Last time I was in FotD I think I spent like 20 minutes picking the junk up and putting it in campfires...
