Thaumaturge build
I'm fairly new to the whole NWN scene so I have no idea how to stat a character/what's actually viable. Essentially I just want to make character that's focused on summoning, but again, I'm a little lost in terms of how to build. What kind of feats (besides the required ones) should I take? Int focused? I was thinking a LE cleric of Bane summoning hell hounds and whatnot, but I'm flexible.
Any help would be appreciated.

Cleric 15/ Dreadmaster 10 / Thaumaturge 5 as a build buff your minions and do whatever you prefer, joining the fray, casting spells, anything goes for a cleric.

Or if you prefer Wizard you could go S5/FrostMage10/T5/PM10 with the aforementioned Beckon the Frozen and the Spell Focus: Conjuration line. PM Summon + Greater Planar Binding will give you a powerful couple of meat shields while you throw the occasional cold based blast spell. There are other options you could take such as dropping PaleMaster in favor of Arcane Scholar, allowing for improved metamagic to empower and maximize your blasts or dropping FrostMage in favor of Archmage to have less focus on cold based spells.
There really are a lot of options to make your evil banite summoner and I echo Valefort that you should spend some time looking over the custom classes to determine what kind of lore/RP strikes a chord for you.

Dreadmaster is the go-to class for clerics of Bane, although the PRC is fairly feat-intensive, almost requiring you to take Tyranny as a domain to save a feat.
Combined with Thaumaturge that is 4 of your 6 (7 if human) pre-epic feats used up. Beckon the Frozen & Extend Spell as per Valefort's suggestion reduces that further to 0 (or 1 if human). Also, it may be that both the Dreadmaster cohort & thaumaturge cohort occupy the same summon slot, meaning you can only have one or the other out at any time. If that is the case you could stop Thaumaturge at 4 instead of 5.

You get 7 pre-epic feats, 8 if human/strongheart Halfling (1, 3, 6, 9, 12, 15, 18). Good point on Thaumaturge 5, Dreadmaster's cohort uses the .. cohort slot indeed and so there's no point going Thaumaturge 5, 4 is enough.

An alternative to dreadmaster would be techsmith of gond, too. Another alternative is taking cleric 15/thaumaturge 5/hierophant 10, taking the animal domain, and taking natural bond and epic animal companion (to make up for the 5 lost HD when you took thaumaturge). Taking monstrous humanoid is fairly good, as it benefits from your cleric buffs.

I was looking at that monstrous humanoid companion, but it said it was mainly for UD. Are there any of them that are surface friendly? You can use them on the surface, but most of any "civilized" adventurer will kill them. Doesnt matter if the adventurer is good or evil. I would be like using undead as minions. Just use discretion when you deploy them.

I always felt like animal domain clerics picking monstrous humanoid rather than an actual animal is kind of weird.

So far, perfect summon, buff and go build. Sword archon mostly used, along with celestial crocodile. Epic Gate added due to time extension with the Thaumaturge.

You go through kobold/bugbear/whatever and end up with an orc. So everyone is called the same. You don't get to choose if you want a kobold/bugbear/orc/whatever. They change as you level up.
A bit awkwardly done tbh. "Oh the kobold I had? Yea, he died. Got this bugbear instead."
