Though I don't see why they've changed it from the standard 10% to 5% - the 10% was low enough, and considering that was actually per hour, so one actually had a much bigger chance of survival, not just becuase of the 10% but because you only took 1 point in damage per hour unless stabilized, so one had a bigger chance getting found and helped. Obviously, as this is a game it wouldn't make sense to have one take 1 damage per hour unless stabilized, but it would make sense to increase ones chances at stabilizing as its the body trying to stabilize it self and not luck itself.

If you're being attacked by multiple enemies, I think it's only logical that you'll most likely die when you're hoping to stabilize 
I think what really does matter is what happens before you die, as others have pointed out.
Make a topic in the tips & tricks forum, or consult one of the many existing ones (the last one is especially good if you don't like grinding) on how to survive the first few levels. Getting somewhere around level 3 - 5 is very doable within an hour, without dying, if you know how
That has nothing to do with healing potions, but everything with other potions/scrolls (mage armor, barskin, heroism, etc.) to not get hit to start with.
