How would one go about changing his alignment? Would I have to just ask a DM? Or would is it in the game mechanics?
For example, going from Lawful Neutral to Lawful Good over time.

There are quest in game as well DM's will shift you if they see it appropriate for your actions.
But we will not shift you for asking for it. You must play your character and give a reason to be shifted in your RP.

There are quest for it on the surface, I don't believe any such exists in the UD as of yet though.
