Well, in this on going guide to fishing and fishing spots around Baldur's Gate and the Central Tradeway.
First of all, Equipment, if you're wanting to take up fishing, head up to the Wide and head to the merchant stall outside of the Darius Estate. They have a selelction of starter fishing rods for races of all sizes, and a selection of bait for sale. A starter set should set you back more that 250 gold, maybe less if you choose to haggle the prices. If you have the coin, buy on of the blessed lucky fishing hats, they may bring you fortune in your endeavours in fishing.
Second of all, to fish you need to attach the bait to your hook and and use the rod to flick the hook from your chosen location. Also importantly keep hold of the rod, can't bring the fish back in without your rod. Once you feel the line twitching, it might take a bit, fish aren't the most punctual, time to pull them in.
And that's the basics of fishing, patience and choosing your spots well.
Now on to the locations.

The humble docks of Baldur's Gate, often heaving with merchants and wares coming and going, but there are a few locations you can set down and cast your rod.
Location 3 out of 5
Whilst busy, with dockers working, there are a few spaces you can find around the floating warehouses where you can find a quiet spot to fish unspoilt. Also whilst it is an uphill walk, the Wide isn't that far to sell your catches and to restock on bait or broken rods.

Whilst the docks are on the estuary, that means most of your catch is likely to be classed as river fishing, so expect perch and trout. Though with the number of ships coming in and out, don't expect many of the larger fish to be caught.

The docks do have their share of problems, namely the quanitiy of ships coming in and out which can mean losing your rod to getting tangled in anchor ropes and chains. As well as the abundance of dockers needed to unload and load the ships means a large chance to have to move fishing spots so you don't get crushed by the crates. The last problem is that once you start fishing, you may find you have company in a large number of cats there to claim your catch as their dinner.

Location 2 - The Baldur's gate docks - The House of the Sea Queen quayside
The humble docks of Baldur's Gate also has a second area that can be used for fishing, and that is the quayside near the House of the Sea Queen

Still in the docks, so the access to the Wide for selling and resupplying. The quayside is a lot quieter so less likely to be being closer to the Sea Queen's temple. So easier to fish, but with some potentially troublesome company.

I have found more bass and crayfish can be found around this quay compared to the docks, but less fish over all. Must be the less disturbance due to ships and proximity to the Sea Queen's temple.

You still have some of the problems with the occasional docker and the swarm of hungry cats, you have a new problem of the clergy of the Sea Queen demanding a tithe for using their quay. Easy enough to give away some of your catch to them to keep them happy and quieter, unless you get the occasional one that chooses to eat the fish raw to provide an intimidating appearance. Hope their stomachs can handle raw trout.

Location 3 - Sea Tower District
The home of the Flaming Fist group and a quieter side of the docks.

Close to the Wide for the usual sales and resupply, and even quieter than the docks, so would be one of the better places to fish.

Due to the Flaming Fists on patrol considering a fishing rod to be a potentially dangerous weapon, people can't fish in the area without getting bothered by the patrols. What happened in the past for guards to think a fishing rod can be dangerous.

Due to the offensive nature of fishing rods, youu can't fish full stop without getting warned, fined or even sent to the prison for holding a potentially dangerous weapon.

No fishing due to dangerous fishing. probably one of the worst places to even attempt to fish. Unless you want the full might of the Flaming Fists upon you.

Location 4 - The Counting House Quayside
Another spot in the docks away from the main docks is the quayside near Waukeenite Counting House and the Ilmatari Charity Kitchen

Very quiet place in the docks since it's the small boat quay, and close proximity to the Wide and East Gate merchants.
Catches 0 out of 5
Unfortunately the whole quay is reserved for small boats so unfortunately there isn't a good spot for fishing without getting in the way of the small boats. Though the occasional group of youngsters may get a chance to go crabbing and pond netting when the Ilmatari temple reserves the space.

Due to the whole place being reserved for small boats, this place would be a good place for fishing if your line wouldn't immediately get tangled in the nearest anchor cable

Location 5 - The Northern Wall Moat
As the North gate that leads to the northern farmlands crosses a moat, perhaps this could be a fishing spot.

Even closer to the wide due to the gate and no steep hills to climb, so one of the better possible places to fish.
Catches 1 out of 5
Due to the bridges, watergates and other contrivances, you're not gonna fish more than minnows and sticklebacks out of any part of the moat, which are not worth the bait used to catch them.

Once again the guards will occasioanlly interupt your fishing, the moat has some steep sides to climb up to even get access to the water and with all the mechanical things on that stretch of the moat, you'll loose your line to waterwheels and other things.

Location 6 - Wyrm's Crossing
The bridge south out of Baldur's Gate, even if there is a toll to get across, does have a few spots for fishing.

Close to the safety of Baldur's gate, the Wyrm's Crossing has a lot of potential for places to fish. The only consistant spot is the shore line down from the old ruins on the south bank to the west of the Bridge. The North Bank is too steep and occupied by the farms of Baldur's gate. The shore line around the fishing spot does also provide a quick digging spot if you are short of bait.

Whilst a busy shipping lane, Trout and sunfish are plentiful in the shallows so easy to fish.

Whilst there is a toll to cross the bridge, it is reasonably cheap to pay. The main issues is that you are a distance from the road side so if the Kobolds that occupy the hilltop ruins do try to raid, you may have a bit of time before reinforcements arrive.

A wonderful surprise, as I wasn't expecting a fishing spot to be found just down from the bridge. If you can survive the rare occasional kobolds raid, this is an excellent starting location to learn your fishing hobby.

Location 7 - The Friendly Arms Inn
A fortress inn along the Tradeway, excellent selection of drinks, the fishing spot is a pond not far from the wagon camp.

Safe and quietish, this fishing spot also has access to a nearby merchant for selling your catch. Though the merchants doesn't sell bait or fishing equipment unless it's second hand, the Rocky Creek wagon allows for quick access to fishing merchants.

The pond, whilst small, does seem well stocked with trout and perch so a good source of medium sized fish.

Other than the lack of any sources of bait to restock, this is one of safest areas to learn to fish,

Probably one of the singular best places to learn to fish, even if there's no available sources of bait. A relatively safe place and an excellent selection of food and drinks at the Friendly Arms Inn.

Location 8 - The Baldur's Gate Graveyard
Surprisingly the graveyard of Baldur's gate has a pond, this I heard from chatting at the Friendly Arms inn. So here I am to explore.

Cold, damp and gloomy, but close to the East gate so close to shops and support but, full of gloom, mud and trouble.

The pond is small and is too shallow for anything other than possibly dumped remains of pets. I'm sure I saw an undead goldfish somewhere in the pond

The place is cursed, undead, zombies and spirits swarm the place, Whilst weak they are a constant threat to any peaceful fishing. Now if the myrkylites Kelemvorites can sanctify the place.

Location 11 - The deeper Mausoleum sewers
By the gods how far down do these sewers go?

Location 12 - The Eastern Sewers
After that exploration of the mausoleum sewers and a chance encounter with a lady missing her lost ring, I decided to actually explore the actual sewers of Baldur's Gate... who knows there may be fishing down there.

Whilst most entrances are close to the Eastern Gate, the place is lawless so expect trouble.

You're only gonna find waste from the Eastern Gate, and the occasional floating body.
Problems 1 out of 5
The eastern sewers do seem to be commonly fought over by various gangs of thieves and outcasts... so expect constant trouble from people attempting to mug you... if half your equipment doesn't go missing.

Only thing you'll catch is various plagues and stabbings, so avoid this place unless you throw yourself in the bay to get rid of the dirt and smell.

Location 13 - The Western Sewers
There appears to be sections of the sewers that isn't fought over by gangs, so maybe some peace and quite for fishing attempts

Again, like the eastern sewers, you're only gonna catch bodies and waste.

Now I know why this section isn't fought over by the gangs... it's occupied by rats of unusual sizes as in nearly as big as an adult hinfolk.

Another places to avoid unless you have multiple cleaning spells, several pounds of soap and multiple methods to treat disease.

Location 14 - The Under Cellars
There does seem to be a neutral area in the sewers known as the undercellars, not sure who determines the neutralness of this teritory

Surprisingly safe for a sewer, and easy access to the wide, but a bit of a maze and there is always the feeling of being watched, even if you know there's no one there.

The waterways around are so tightly controlled there is barely any chance of fishing up any medium and above sized fish.
Problems 2 out of 5
Despite it being a neutral zone, expect half your catch of sewer minnows to go missing as well as your coinpurse and other equipment. Not to mention the constant hassling for fishing licenses and the constant paranoia of being watched.
