I'm wondering, and this is really getting to me..
How do I RP when someone suddenly falls asleep in the middle of the street?? Do people ignore the ZzZZZZ when they rest, or what . . .?

Resting is not necessity sleeping. I prefer to RP sitting around a campfire outside the dungeon when I want to rest but not everyone likes that. As for falling asleep in the middle of the street, It's actually very possible to regain your strength in a few minutes of relaxation. Think of IRL battles, soldiers pulled out after 15 minutes of battle, then when it came for their time again they waded in again.

Resting is rarely roleplayed, it leads to oddities unless you roleplay snoring for 1 hour while the others around you talk. So most people ignore this.

There's quite a few places out there that have done away with the sound effect and the "Zzzz" when resting. But I'm pretty sure that this would never make it on the "important things to do" list.

RPers shouldn't be doing that... You can tell the players //ooc, that it is annoying, immersion breaking, etc.
This is an RP server, but there are players that will not fit your play style.
Ignore it, say something, play with someone else. This is my approach.

You are right to be concerned. As you can tell, most rests are somewhat OOC. This is why DMs do not want people resting in their events; it's usually just an OOC way to get heals and spells back. Unfortunately, there is often no RP involved.
But some people will take some effort to RP the rest (as they should). They might wash their face in a nearby fountain to refresh themselves, unwrap bandages to treat their wounds, open their spellbooks to study their spells, etc. Some people might even RP making a camp and resting for a full night.
So when you see people drop down and ZZZzzz without any emotes, it's a lack of RP. I myself don't know how to respond to it. Maybe a "Hey, why are you napping in the streets?"

Since our characters seem to need only 5 seconds of rest, I pretend my character is stopping to say a prayer and I generally treat others the same way.
I really think that resting in the game is one place where we just have to suspend disbelief. Every server I've been on where they tried to add realism to resting, whether it be the need for food, bedroll, not healing all your hitpoints, taking longer, etc. has accomplished nothing but annoying the player base.
